Strawberries are slowly brought to the boil, breaking down the fruit completely. They are simmered gently, then transferred to our fruit press where they are squeezed slowly to release the delicious strawberry juice.

Red currants are brought to the boil and simmered for 10 minutes. The juice and fruit is then pumped into our fruit press where it is squeezed to extract the maximum amount of juice from the fruit. Quinces are part of the apple family. To produce this traditional jelly we crush the fruit, bring to the boil and simmer for 3.5 hours. This releases all the flavour and gives the jelly its wonderful pink colour. It is then pumped into our fruit press to release maximum flavour. Ideal for use as a condiment. Quince can be used as a glaze for meat pies.

An unusual looking fruit which dates back to Roman times. Rough-skinned, misshapen, and practically inedible as fresh fruit, the cooked juice of the medlar takes on a rich burgundy colour and the flavour of spiced apples. Picked in November, it is the very last crop to be harvested at Tiptree. The fruit is not ripe until it is bletted, that's when the soft brown pulp can be squeezed from the skin. This complements cold meats and cheese, adds a rich gloss to gravy or is a delicious base for an apple pie.

Quince conserve is made solely from fruit grown on the Tiptree farm. Quince is a most unusual fruit, about the size and shape of a large misshapen pear with yellow fluffy skin. Tiptree's Mulberry Jelly is made from mulberries grown in a small orchard at the back of the factory. The trees are as much as 150 years old and some young tree planted recently are expected to bear fruit within 20 years or so. Our ancient Mulberry trees at Tiptree provide a rather erratic crop of this rich and much prized fruit. The delicate berries stain hands when picking which is where the term "caught red handed" originates from, as it's rather obvious if somebody has picked a juicy Mulberry! There is nothing quite like the flavour of Mulberry Jelly. The unique taste of the fruit in the soft texture of the jelly lets it almost melt in your mouth.
